Serve up the perfect bookends for your delicious meal with these avocado-based treats.



Holy Guacamole!

Recipe submitted by Mesa Rim member and winner of the Avocado Cup guacamole competition, Audrey Enriquez

5 avocados
1.5 limes, juiced
0.5 medium onion
4 garlic cloves
0.25-0.5 cup cilantro
3 habaneros
1 finely diced tomato (no seeds)
Take everything and mix it in a bowl. Nothing fancy, I just used a spoon.
Then season with about 0.5 tsp= freshly ground pepper and 1 tsp salt. Adjust everything to what you like. Personally, I would’ve added more habanero and cilantro.

Let it sit in the fridge to marinate (?). The longer it sits, the better it tastes. But not for too long, then it will turn brown. And we don’t want that.



Avocado Brownie

Recipe submitted by Mesa Rim member and winner of the Avocado Cup dessert competition, Dan Ronquillo

4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
1/2 cup flour
1 1/4 cups cocoa powder, sifted
2 teaspoon vanilla extract
1/2 teaspoon salt
2 mashed avocado
Pieces of your favorite candy (I recommend Kit-Kats)
Preheat oven to 275˚F/135˚C.
Beat eggs at medium speed until light yellow and fluffy.
Add sugars and beat on low speed just until well-blended.
Add remaining ingredients and beat together on low speed to combine.
Pour brownie batter into a greased and floured 8-inch square pan. Add candy to the top of the brownies.
Bake for 50-55 minutes (or until a toothpick inserted in the center comes out clean).
Allow to cool before slicing and serving.
